Gourd enzyme reduces peanut-protein antibody binding in lab tests

Researchers in Poland found that an enzyme from figleaf gourd reduced peanut proteins’ recognition by allergy-related antibodies in laboratory tests, Phys.org reports. Some reactive protein fragments remained. The work has not produced peanuts that are safe for people with peanut allergy; further tests must establish whether the treated material can still trigger allergic reactions.
