Sauce placement changes perceived healthiness in small dining study

In a 57-person restaurant study, diners rated the same sturgeon dish as healthier-looking when sauces were placed separately rather than drizzled, Keio University reports via Phys.org. Other pre-tasting ratings did not differ significantly, and later differences did not survive statistical correction. The presentation changed perception, not the dish’s nutritional value.
